Because a good olive oil makes all the difference.
Organic and local, we went to get it from the mills of Tudela in Navarre (less than 200 km from our workshop) from producers with whom we have been working since 2003.
All our ingredients have been chosen using the same approach: local, organic and good, like the Espelette pepper sourced less than 30km from us.
